Greek Salad and Dressing Recipe

This is one of those recipes that was s staple in my Catering and Meal Delivery days! A cinch to throw together, you can use a simple store-bought dressing or use my recipe (included below). Add some grilled chicken or steak and you’ve got yourself a full meal!

Greek Salad

What You Need

  • 1 large seedless English cucumber
  • 1 pint cherry or grape tomatoes
  • 1 package feta cheese
  • 1 small jar of quartered artichoke hearts in water optional
  • 3 T. Greek dressing

How to Make It

  • Cut cucumber lengthwise into 4 equal pieces and cut into a small dice.
  • Cut tomatoes in half lengthwise.
  • If using artichoke hearts, rough chop if pieces are too large.
  • Combine all ingredients in a bowl and stir gently.
  • Let set up at least 1 hour and enjoy!

Greek Dressing

Course: Dressing, Sauces/Dips
Servings: 8 servings per recipe -1/4 c. per serving
Calories: 181kcal

What You Need

  • ¾ c. extra virgin olive oil
  • ¼ c. good quality red wine vinegar
  • t. oregano
  • 1 t. sea salt
  • pinch of pepper

How to Make It

  • Whisk all ingredients together in a bowl, or place in a tightly covered jar and shake to combine.
  • The dressing will turn a light color with a creamy texture as the oil and vinegar combine.
