Crockpot Chicken Parmesan Recipe

Chicken parm in the crockpot, say what??  I bet you’ll never make it the old way again! TIP: Use my recipe for 30-minute marinara (included below) and serve over some zoodles or noodles and you have an amazing meal in no time flat!

 

Crockpot Chicken Parmesan

What You Need

  • 4 thin cut chicken breasts
  • 2 c. marinara sauce
  • 2 T. TLC Rustic Italian Seasoning
  • 1/3 c. chopped basil
  • 1/3 c. mozzarella cheese
  • 1/3 c. parmesan cheese

How to Make It

  • Pour 1 c. of marinara into Crockpot.
  • Place chicken over marinara in a single layer.
  • Sprinkle Italian seasoning directly over the chicken.
  • Pour remaining marinara over chicken.
  • Cook on LOW for approximately 4 hours. (Depends greatly on your Crockpot)
  • During the final hour, sprinkle the mozzarella and parmesan on top of chicken and re-cover.
  • Serve over veggie or quinoa pasta and top with fresh basil.

30 Minute Marinara Sauce

What You Need

How to Make It

  • In a saucepan, simmer all ingredients for 30 minutes. (it can go longer if desired) Remove bay leaves.
  • Use a blender to create a smoother consistency (optional)
  • TIP: I often blend half, so that I have a mix of textures!
