Ranch? Chicken tenders? Ranch chicken tenders?? You bet! Simple and delicious, these will become a hit for grownups and adults alike! Serve with a side of my famous dump ranch (recipe below) and you’ll be in flavor heaven!

What You Need
- 8 chicken tenders
- ½ c. milk
- ½ c. Greek yogurt 2% or 5% works best
- 2 T. grated parmesan cheese
- ¾ c. bread crumbs may use traditional, panko, gluten free or even crushed pork rinds
- 1 packet TLC Ranch Seasoning Packet
How to Make It
- Whisk together yogurt, milk, and ½ of the seasoning packet.
- Combine with chicken tenders until well coated, and let marinate in an airtight container for at least 2 hours in the refrigerator.
- Mix together bread crumbs, the other half of the ranch seasoning, and parmesan cheese. Sprinkle evenly along the bottom of a small pan.
- Press chicken tenders into bread crumbs evenly on all sides and transfer to a foil lined pan.
- Distribute extra bread crumbs evenly over top of the chicken tenders.
- Bake at 350 degrees for 20-25 minutes.
- TIP: These can be made ahead of time and held in the refrigerator for a few hours.

What You Need
- 1 egg
- 1 c. extra light olive oil this is KEY
- 1 T. lemon juice
- 2 T. white vinegar
- 1 c. full fat coconut CREAM Thai brand is best...make sure it's the cream
- 1 handful of chopped cilantro or parsley
- 1 packet TLC Ranch Seasoning Packet
How to Make It
- In a container, add ingredients except the seasoning packet and use a handheld immersion blender to emulsify the ingredients. You may also use a good quality traditional blender. Blend well until totally emulsified and then stir in the seasoning packet..
- TIP: When using an immersion blender use the container that came with it and add the egg, then oil, the coconut cream, then vinegar, lemon juice, and seasonings. Stick the immersion blender at the bottom of the container, turn on, and do not move it until a lot of bubbles start to form on the top. Once this has happened you may move the blender around to make sure everything is well combined.
